Halloween Snack: Creepy Monster Eye Deviled Eggs

With Halloween just around the corner, it’s time to start thinking about what to make for spooky snacks! We love deviled eggs in our house and this fun Halloween snack is just the ticket to spooking kiddos while feeding them healthy, yummy food.

Healthy and Halloween? Yes, I did just say that. This particular Halloween snack is savory, which can be tough to find, and is made with avocado and eggs, so it’s packed with protein and good fats to help your child grow. Plus, it’s a good to offset a bit of the sugar the kids (and who are we kidding, adults, too!) are consuming.

Monster Eye Eggs Halloween Snack

Makes 12 eyes

6 hardboiled eggs
1/2 avocado
1/2 teaspoon lemon juice
paprika
salt to taste
red and green food coloring
green or black olives with pimiento centers

Peel your eggs and cut them in half lengthwise. Scoop the yolk into a bowl and set the whites aside.

In the bowl, mash the avocado with the egg yolks until smooth, with a fork. Add a dash of paprika, the lemon juice and salt to taste. Add a bit of green food coloring if you like.

Use a toothpick dipped in red food coloring (gel food coloring works best) or a red food marker to draw veins on your eggs.

Spoon the yolk and avocado mixture back into the eggs, smoothing it out a bit to look like a bulging eye.

Slice your olives into thin rounds and top the eggs with them. While I used green olives, because that’s what I had, you can easily put black ones on, too.

Arrange your monster eyes on a plate and serve, or keep them in the fridge for up to two days.
